The making technique of Shimei Panxiang Cake is a traditional skill item in the sixth batch of representative items of Suzhou's municipal intangible cultural heritage. Shimei Panxiang Cake originated in the "Shimei" area on the southeast foot of Yushan Mountain in Changshu, Jiangsu Province. It is deeply loved by the people in Changshu and surrounding counties and cities such as Zhangjiagang, Gushan in Jiangyin, Nantong and other areas, and is popular in East China. Shimei Panxiang Cake has a long history as an important branch of Suzhou-style pastries. According to legend, when Xiao Tong, the prince of Liang Zhaoming, was studying in Shimei, Changshu, a shop owner made this kind of cake for the prince, which was very appreciated by the prince. This cake is made of fine flour, rolled into the shape of a pan of incense, and then baked on the fire. Because it looks like a pan of incense and is produced in Shimei, Xiao Tong named it "Shimei Panxiang Cake", which later became widely circulated. During the Republic of China period, the cake maker surnamed Zhou from Shenxingji Steamed Cake Shop in Shimei, Changshu, continuously improved the Shimei Panxiang Cake to make it more flavorful. In 2010, after government integration, Changshu Shengbaihe Food Co., Ltd. was determined as the main production base of Panxiang Cake. Shimei Panxiang Cake is made of refined and cooked lard, sugar lard, soft sugar, sesame seeds and maltose. First, make dry oil pastry, then knead the dough, wrap the various fillings into the dough, insert the oil pastry at the same time, roll it into long strips, and make it into a panxiang-shaped cake. Brush it with maltose syrup and sprinkle with sesame seeds. In addition, with unique baking techniques, it is golden in color after it comes out of the oven, crispy on the outside, crispy on the inside, sweet in the mouth, and does not stick to the teeth. It is even more crispy and delicious when it is eaten right out of the oven, and is loved by the people. People will buy Shimei Panxiang Cake when they pay tribute to Buddha, entertain guests, and visit relatives and friends. Today, the "Shimei Panxiang Cake" is made more and more exquisitely. It not only has a more beautiful shape, but also has a wide variety of fillings, such as rose, scallion oil, various fruits and pepper salt, etc., with different flavors, which can be selected according to people's taste. It is praised by gourmets as a major feature of Changshu food. In 1985, it was included in the "Chinese Snacks Jiangsu Flavor" and was rated as a famous snack in Jiangsu by the China Cuisine Association in 1999.
