Shrimp cakes were first popular in the Jiangnan region. As a traditional snack in Changzhou, Jiangsu Province, shrimp cakes are the most famous. Because the shape of shrimp cakes is similar to that of waist drums, they are also called "bronze drum cakes" by Changzhou people. Yuan Mei, a writer in the Qing Dynasty, wrote in Suiyuan Food List: "Shrimp cakes, raw shrimp meat, onions, salt, pepper, a little sweet wine, add water and flour, and simmer with sesame oil." From this, it can be inferred that shrimp cakes have a history of nearly 200 years. In Changzhou, shrimp cakes, a traditional snack with raw shrimp meat, flour and other ingredients, are the most famous in Qingguo Lane. Qingguo Lane is the best-preserved and most prestigious ancient street in Changzhou City, and it is the essence of Changzhou's overall historical style. It not only retains some historical relics from different historical periods, but also retains the simple and beautiful Jiangnan water town charm and local customs. In the 1950s and 1960s, there were only two shops selling shrimp cakes in Changzhou City, one of which was in Qingguo Lane, and the name of Qingguo Lane shrimp cakes was derived from this. Qingguoxiang shrimp cakes have special copper or aluminum tools for making them. The bottom is flat, like the size of a small rice bowl, with a wavy lace. When making it, use cold water to mix the flour, and add egg whites to make a thin paste, and add soy sauce, salt, and pepper to season. When the oil temperature is heated to 60 degrees, the batter can be used with tools, sprinkled with chopped green onions, and then three or five river shrimps are put into the oil pan and fried. When the surface is golden and crispy, it can be taken out of the pan. When eaten, it is crispy on the outside and soft on the inside, fragrant and delicious. The specific methods and tastes of shrimp cakes vary from ancient times to the present, but Qingguoxiang is roughly similar. The main ingredients are 600 grams of shrimp, 10 grams of lemon peel, 100 grams of green beans, appropriate amount of lettuce leaves, 1 cucumber, 1/3 cup of chopped coriander, 1/3 cup of chives and peanuts, 50 grams of fat pork fat (cut into small pieces), and 3 tablespoons of cooking oil. The seasonings include 1 teaspoon cornstarch, 1 to 2 egg whites, a little salt and pepper, and 1/2 teaspoon sesame oil. The steps are: 1. Soak the shrimp meat in salt water for half an hour, then rinse and drain with clean water, flatten it with a knife, chop it for a while, put it in a bowl, add seasonings, and stir it in a clockwise direction until it becomes gelatinous; 2. Add the shrimp paste to the fat pork diced meat and sesame oil, mix well, divide it into several portions, and make it into round cakes with a diameter of about 5 cm. Add seasoning 1 and mix well. Beat for about 5 minutes to make the meat more elastic. 3. Dice the green beans, mix with the shrimp, and then pinch them into small flat round cakes with your hands. 4. Heat the oil pan, put the shrimp cakes in and fry them. After 30 seconds, fry them on low heat. When the surface turns yellow, fry them on high heat for about 10 seconds, squeeze out the oil, remove them, drain the oil, and put them on a plate for later use. 5. Bring the seasoning to a boil, then simmer for 3 minutes on low heat and turn off the heat. After cooling, use a juicer to make a sauce for later use. 6. When eating, you can eat it directly with the sauce, or you can wrap the shrimp cakes with lettuce leaves and pour the sauce on them before eating them together. Qingguoxiang shrimp cakes are best eaten hot, crispy on the outside and soft on the inside, fragrant and delicious. The aroma of scallion oil, the freshness and crispness of river shrimps, and the fragrance of the rice dumplings wrapped when they are out of the pot, take a bite, the taste is rich, and the fragrance lingers on your lips and teeth. The shrimp cakes are small in shape, golden in color, unique in taste, and finely made, which embodies the pursuit of exquisite life by Changzhou people.
