Siyi Cake Making Technique
Siyi cake making skills are a traditional skills project in the fifth batch of representative projects of Nantong's municipal intangible cultural heritage. The "Siyi cake" making skills are the general term for the cake making skills of Siyi Cake Shop, a century-old shop in Nantong. The characteristics of its cake making skills are "wet grinding, fine screening, double high steaming, and water locking". Therefore, the "Siyi cake" produced has the characteristics of "glutinous, soft, loose, and fine", which can be called a unique feature of Nantong and is deeply loved by the people. Siyi's cakes include Qingtuan (qinghaoxisha dumplings) in spring, Liangtuan in summer, Chongyang cake in autumn, Nantong New Year's cake (commonly known as "big cake" and "water towel cake") during the New Year, and square cakes (honey cakes), osmanthus cakes and other series of cakes are also available all year round.
