Shanghuang Town is located in the northeast of Liyang City, on the south bank of Changdang Lake, and borders Yixing. At the beginning of the 20th century, the Shanghuang people, with their spirit of exploring new delicacies, tried to debone the whole mutton for the first time, then tie it with fragrant straw, and slice it for consumption after cooling. They found that this method of making mutton is convenient for storage and consumption, and can be eaten without secondary heat processing. Gradually, the practice of tying mutton into mutton cakes became popular in Shanghuang Town. Mutton is hot and sweet, and is a good tonic for winter. Made into mutton cakes, it is delicious, fat but not greasy and is loved by people. Shanghuang mutton cakes are made of high-quality and healthy male goats with a growth period of one to two years. After slaughtering and bleeding, peeling, cleaning, breaking and cleaning, it is boiled with rock sugar, fennel, cinnamon, chili, bay leaves and other materials. When the meat is cooked and the fragrance is everywhere, remove the bones. Finally, use the steamed fragrant rice straw to roll the mutton into a cylindrical shape, remove the weeds after cooling, cut into thin slices, put on a plate, and serve with homemade sweet and spicy sauce. The unique appearance of Shanghuang Yanggao is obviously different from other mutton products and is easy to identify. As the representative of Shanghuang Yanggao, "Shanghuang Six-Finger Yanggao" and "Mutton Mazi Yanggao" have been awarded the honorary titles of "Changzhou Famous Snack", "Jiangsu Famous Dish", "China Famous Dish", etc. In 2016, CCTV's "Taste" column conducted a special interview, and Changzhou TV Station and Shanghai TV Station also conducted special interviews on the food column. In 2018, it was selected as the third batch of "Changzhou Time-honored Brands" in Changzhou.
