The skill of making sesame cakes (the skill of making scallion pancakes in Yangxiang) is a traditional skill project in the third batch of representative expanded projects of the municipal intangible cultural heritage in Wuxi. It started in the late Qing Dynasty and matured in the early 1930s. At that time, Wei Shugeng, a famous pastry chef in Yangxiang, founded the "Shunchangxiang" pastry shop, and the scallion pancakes made and sold were the most popular. In 1956, the "Shunchangxiang" pastry shop and the Yangxiang Supply and Marketing Cooperative implemented a public-private partnership. Later, the Yangxiang Supply and Marketing Cooperative established a food processing factory, mainly producing scallion pancakes. The main raw and auxiliary materials of Yangxiang scallion pancakes are flour, soft white sugar, lard, scallions, etc. The excellent quality of the product is ensured from the selection of raw materials, ingredients, production and baking. The scallion pancake has a uniform thickness of skin, a proper ratio of skin and filling, delicate fillings, and a neat and smooth appearance. It tastes sweet and salty, with delicious scallion fragrance, crispy skin and refreshing fillings, and a crispy taste.
