Sugar making in Yangcheng Shuicun is a traditional industry of the village with a history of 300 years. As early as the Ming and Qing Dynasties, merchants from Henan, Shandong, Anhui, Shaanxi and other places came to Yangcheng Shuicun in groups to carry "stove sugar" before the 23rd day of the twelfth lunar month every year. Shuicun is located in the west of Yangcheng County. Historically, the handicraft industry was mainly sugar making. Basically, every household in the village had a sugar shop, and there were more than 80 of them. The main raw materials for sugar making in Yangcheng are corn, millet and wheat. The production process is roughly divided into two steps. One is to make dough, and the specific steps include germination, boiling, putting into the pot, filtering, crushing, etc.; the other is to make sugar, and the specific steps vary depending on the type of sugar. The main products of Yangcheng sugar making include stick candy, sesame candy, Yugu candy, filling candy, cut candy, board candy, sugar melon, etc., which are fragrant, sweet and crispy. The products are sold far and wide in Shaanxi, Henan, Hebei, Anhui and other places, and enjoy a high reputation among the people. During the Republic of China, people from Jiyuan and Mengxian in Henan, Yan'an in Shaanxi, Yicheng, Fushan, Changzhi, Yuanqu, Hongdong, Jincheng and other places in the province came to learn the craft or invite the village masters to teach the craft. However, due to the complex traditional sugar-making process, high labor intensity, high cost and low returns, the sugar-making industry in Shuicun is shrinking.
