Mu Guiying cake making skills are a traditional skills project in the fourth batch of representative projects of Wuxi's municipal intangible cultural heritage. Mu Guiying cakes are made from rice flour and are classified according to the spring, summer, autumn and winter seasons. There are 18 series and 144 seasonal cakes, dumplings and zongzi products. "Mu Guiying" cakes are always fresh all year round. Its characteristics are that it focuses on Chinese traditional festivals and customs, learns and absorbs cake making techniques from all over the country, relies on the brand advantages of Mu Guiying, constantly adjusts product structure, vigorously promotes deep processing of agricultural products, and deeply develops, and implements the leap from ordinary and traditional foods to modern foods containing health elements, cultural tastes, and regional customs. In recent years, we have focused on the development and research of "Mu Guiying" cake making skills to enable it to be inherited and developed. The 18 production process flows of Mu Guiying cake products, including rubbing, cutting, rolling, wrapping, pinching, rolling, folding, spreading, stretching, twisting, cutting, cutting, picking, rolling, squeezing, clamping, inlaying, shaping, and molding, are summarized.
