Guiren mung bean cake, also known as "Guiren small bean cake", is a handmade bean-based side dish in Guiren Town, Sihong County, Suqian City. This production technique is widely spread in the relevant towns and villages of this county and the surrounding areas of Guiren. In the fourth year of Wanli in the Ming Dynasty (1576), a local bean product workshop ground out a good mung bean paste when processing mung bean vermicelli, but it was unable to make vermicelli due to continuous rainy weather. The owner heated the iron griddle at home, coated it with oil, and dripped the mung bean paste onto the griddle drop by drop to form a round small cake. After scooping it up and cooling it, it was fried and eaten. It was very palatable and was widely circulated among peers and widely accepted by the public. After later processing and improvement, the corresponding auxiliary materials were added, and the "Guiren mung bean cake" was born, and its production technique was inherited by future generations. Guiren mung bean cake has the characteristics of exquisite material selection and pure handmade production. Guiren mung bean cake produced with authentic raw materials is egg yolk yellow and translucent. It can be stir-fried, braised, stewed fish, or used as a staple food. It has the characteristics of crispy, soft, crispy and smooth taste. Guiren mung bean cake making technique has a long history, and always maintains the original method of manual "drip pot" and small stone mill to process bean paste. The product is original and has historical empirical value. The finished product is not only a table delicacy, but also a good gift for relatives and friends. It is a green and healthy food that is loved by the people.
