Zhengchang smoked cake making technique
The production technique of Zhengchang smoked cake is a traditional skill project in the third batch of representative projects of Nantong City's intangible cultural heritage. Zhengchang smoked cake is a traditional historical product of Tongzhou District, Nantong City. According to historical records, Zhengchang began to produce smoked cakes during the Jiajing period of the Ming Dynasty. This shows that Zhengchang smoked cake has a history of nearly 500 years. Zhang Shundao and Zhao Yangchun, the two masters who are the descendants of the time-honored Zhengchang smoked cake-making brands "Santaihe" and "Ma Jusheng", recalled the recipes and skills taught to them by famous teachers when they were young. After excavation and sorting, and repeated research and development, they finally regained the traditional flavor of this historical product. Zhengchang smoked cake has undergone three adjustments in recipe and baking. The main raw materials are fried high-quality glutinous rice flour, white sugar, and vegetable cooking oil. The finished product has a crispy taste. The baking uses a hanging furnace and the fuel is tree firewood. Pure white sesame powder was added later, and the taste is more crispy and fragrant.
