Cooking bacon is also called bacon juice, which usually starts on the 27th or 28th of the twelfth lunar month. First, wash and soak the air-dried chicken, duck, fish and other ingredients. It is officially cooked on New Year's Eve. Use fresh spices to mix and blend a deep red marinade. Put the soaked ingredients into the pot, boil, turn them over, remove the blood and foam, take them out and let them cool and dry slightly, and then put them into the marinade pot in batches according to the degree of ease of cooking until they are cooked. The cooked bacon juice meat is red and tender, with a strong aroma, and it makes your mouth full of saliva. Children eat first, and their mouths are greasy. Adults just taste it. In the first month of the year, as long as there are guests, they first serve rice wine and Lantern Festival, and then white rice and bacon juice meat, and they eat until after the Lantern Festival, or even for the whole first month of the year. Such delicious bacon is now only available in the mountains. Pigs, sheep, chickens, and ducks are all raised outdoors, eating wild vegetables, rice bran, red dates, potatoes, and corn, drinking mountain springs, breathing fresh air, bathing in morning dew, and looking at the bright moon. They are originally two concepts compared to poultry that eats all kinds of additives and is quickly raised. The quality is between heaven and earth. Steaming steamed buns is almost done at the same time as cooking bacon. The yeast dough is fermented the night before, and the flour is thoroughly fermented the next day, and then the dough is kneaded. This is the time for the skilled women to fully display their skills, or make flower rolls, jujube cakes, or meat buns, vegetable buns, and red bean paste buns, or make steamed buns into pigeons, rabbits, and frogs, which means peace and good luck, smart children, and a good life. Before steaming in the steamer, don't forget to spread a lotus leaf on the bottom of the steamer. The steamed buns steamed with lotus leaves are sweet and refreshing, with a long aftertaste. When guests leave during the first month of the lunar year, they always take some with them, which means that they have not left empty-handed.
