Shengjian mantou, also known as Shengjian buns, is a traditional snack popular in Shanghai, Zhejiang, Jiangsu and Guangzhou. It is widely loved by Chinese people. The ingredients include flour, sesame, chopped green onion, pork, pork skin jelly, etc. Shengjian mantou is a native variety of Shanghai, with a history of nearly a hundred years. Its origin is no longer traceable. It was originally an old teahouse, and the tiger stove also sold dim sum. It was not until the 1930s that Shanghai's catering industry had a professional store for Shengjian mantou. The semi-fermented sauce soup type Shengjian mantou production technique is one of the two major production techniques of Shanghai's traditional Shengjian mantou. Its core is that the dough is rolled out with semi-fermented flour, that is, the fermentation time of the flour is artificially controlled and stopped in time when it reaches a certain degree. This process is closely linked to a series of factors such as the climate, air temperature, water temperature, pH value of the dough, the degree of dough awakening, the amount of water and skills during baking during processing; the meat filling is colored with soy sauce, the color is relatively moist and there is a little umami soup. When the finished product of Dongtaixiang Shengjian is served, the bottom is golden, fragrant and crispy, the body is semi-fermented, white and soft, the meat filling is tender and juicy, and it is sprinkled with green onions and sesame seeds (especially black sesame seeds) before being served. Even after the Shengjian is cold, its top will not sag downward, "the top is cold but not collapsed", which meets the highest industry standard for the quality of Shengjian. The technical characteristics of Dongtaixiang Shengjian are more reflected in the mouth, the taste is quite flexible, the meat filling is firm; the juice is rich and rich and delicious; the bottom is golden, fragrant and crispy; a bite of the meat, oil, sesame, and green onion aromas mixed together in the mouth for a long time, it is best to eat it while it is hot. Shengjian, as a traditional Shanghai snack that is deeply loved by people, has always had a large number of citizen consumers, carrying the preservation and inheritance of the traditional taste habits and memories of Shanghai citizens.
