Gaotai gluten and jelly are local specialties with a long history in Gaotai County. Gaotai County is located in the middle of the Hexi Corridor. The Heihe River, the second largest inland river in China, runs through the entire county. Since the Ming Dynasty, it has been an ideal region for agricultural production. It is rich in crops such as wheat and rice. It is one of the 12 commercial grain bases in the country. Together with Linze, Ganzhou and other counties and districts, it has achieved the reputation of "Golden Zhangye". The developed agricultural foundation has provided the possibility for the prosperity of food culture. For this reason, "Golden Zhangye" has nurtured Gaotai gluten, an outstanding representative of food culture. Its unique craftsmanship and delicious taste make it a good product for entertaining guests. It can be eaten hot, cold, or dried and stored. When eating, it can be put into the prepared broth to become fast food. The processing method is mastered by a few middle-aged and elderly women in rural areas of the county and is deeply loved by guests from all over the world. Preparation method: Use flour produced by local farmers, according to the ratio of 3 jin of flour to 25 grams of salt, and knead the dough until it is not stained with hands. It is called "kneading noodles". Put the dough into cold water and knead it repeatedly, which is called "washing noodles". Pinch the separated gluten balls into small pieces, dissolve salt water, take dry flour and mix them together, knead them, cover them with a clay pot and place them for a while, wait for them to spread, roll them thin with a rolling pin, stretch them on the "pie", put them into the pot and steam them to make "gluten". The steamed gluten can be eaten directly by hand, or cut into thin strips. Or roll them into a fist-shaped small plate, dry them and store them. At the same time, there is another way to eat gluten: cut the washed gluten balls directly into small pieces with scissors, put them into a pot of boiling water (boiled water), and add potato pieces, ginger and other side ingredients at the same time. After cooking, they can be eaten. The taste is very delicious, which is called "gluten bubbles" or "yellow powder". After separating the "gluten", the starch water is removed and the yellow water floating on the surface is put into the pot and heated and stirred until it becomes a paste. It can be eaten while hot, which is called "hot noodles"; it can also be eaten after cooling into solid crystals, which is called "cold noodles". Cut into thin strips, it is "vermicelli noodles". If it is dried in the sun, it is "rice noodles", which can be stored or given to relatives and friends after being tied into bundles. During the busy farming season or the New Year or other festivals, or when relatives and friends visit, or to save time, locals often put "gluten" and "rice noodles" into the pot together, and add potatoes, meat, etc. to make a delicious meal, which is called "gluten soup".
