Jiujiang Osmanthus Tea Cake is one of the best. Jiujiang Osmanthus Tea Cake is one of the four traditional pastries in Jiangxi Province. It originated from Gutang Town in Jiangzhou during the Song Dynasty. It is a sweet, crispy and refreshing tea snack supported by tea oil, maltose, sesame and osmanthus, which is very popular among tea drinkers. During the Ming and Qing Dynasties, tea cakes, as a traditional pastry, were transformed from teahouses to workshops, and necessary reforms were made to their production process and ingredients, especially the "four fragrances in one" of tea oil, sesame, osmanthus and soda, which made them crispy and sweet. Merchants regarded osmanthus tea cakes as Jiangzhou specialties and brought them back to their hometowns as gifts for relatives and friends. In the 1930s, pastry workshops such as "Liang Yilong" hired the famous chef of the Ding family in Gutang Town to produce osmanthus tea cakes. In 1980 and 1984, Jiujiang osmanthus tea cakes were twice rated as provincial and municipal high-quality products, and at the same time ranked among the four major traditional pastries in Jiangxi. In June 2010, it was included in the third batch of provincial intangible cultural heritage representative list.
