The cooking technique of Da Dao Noodles is a traditional skill project of the fifth batch of representative projects of the intangible cultural heritage of Lianyungang City. According to folk legend, Banpu Da Dao Noodles has a history of at least 160 years, and there are three families, Huang (Xiu Wen), Xia (Qing Sheng), and Yang (Bing Cheng), which are in a three-way competition. At that time, Huang Xingyu, the first-generation inheritor of Huang's Da Dao Noodles, created Banpu Da Dao Noodles on the basis of ordinary noodles. Its special craftsmanship, chewy taste, refreshing and tender, is well-known in the four townships and eight towns. Da Dao Noodles, also known as Tiao Chi Noodles, are purely handmade, and its craftsmanship is also very unique. The main ingredients of Da Dao Noodles are very particular, and high-quality flour must be used. First weigh an appropriate amount of flour, put it in a bowl, add water, salt, alkali, and knead it with your hands. After the flour is mixed, it is spread out on the chopping board. A round wooden bar about five or six feet long and as thick as a teacup is taken. One end of the wooden bar is put on the iron ring. The master chef sits horizontally on the wooden bar and rolls the noodles while jumping and moving forward inch by inch. The movements are elegant and beautiful, just like dancing. This is why Dadao noodles are also called jumping noodles. This is repeated more than ten times. Rolling the noodles is the key to Dadao noodles. The rolled noodles are evenly rolled on a 2.6-meter-long iron rod. Two people press with both hands at the same time, moving the iron rod and the noodles forward at the same time. When the dough is evenly overlapped on the chopping board layer by layer, the iron rod is removed. After the dough is rolled, a long-handled large side knife with one end fixed is used to cut it by hand. The technique is skillful and fast. The noodles cut are fine and uniform, which can be called a unique feature of Banpu. The thickness of the dough is uniform, the noodles are fine and appropriate, and the cooked noodles are refreshing, tender, and have a unique chewiness and flavor.
