Dayang Zhuan Noodles is a local specialty noodle popular in Dayang Town, Zezhou County, Shanxi Province. It is said that Zhuan Noodles originated from the Zhou Dynasty. It was originally a palace delicacy. Later, it spread to the people and became an indispensable staple food for weddings, funerals, and entertaining guests. The production method of Zhuan Noodles can be divided into 11 steps: 1. Mixing ingredients. First, select refined flour, and then accurately mix salt, alkali, locust leaf juice, wild vegetable juice and other raw materials in proportion; 2. Kneading noodles. In ancient times, rolling pins were used to press noodles. After spreading to the people, it was further developed and pressed on stone mills. Kneading noodles requires sweating on the noodles, otherwise it will not meet the requirements; 3. Cut the noodles into pieces of equal weight and then apply oil. 4. Roll the noodles. The noodles must be rolled evenly, as thick as mulberry paper and as wide as chive leaves; 5. Cut the noodles. A piece of noodles must be accurately cut about 180 times; 6. The cut noodles must also remove excess powder, and there are many processes such as stroking, panning, and pressing; 7. Put them in food boxes and seal them for fermentation. Fermentation time depends on different seasons and temperatures; 8. Cooking noodles is also quite particular, requiring a large pot, lots of water, and a high fire. Cook in boiling water, and the length of time depends on experience; 9. Filtering. After the cooked noodles are out of the pot, they must be promptly put into cold water and filtered twice; 10. There are also particularities for scooping noodles. The noodles must be scooped shallowly, not full of the bowl, otherwise the flavor will not be tasted; 11. When eating noodles, pour boiling water over the noodles in cold water twice, and then you can pour the sauce on them and eat them. Dayang noodles, as an important part of Shanxi noodle culture, contain a profound cultural heritage and have important academic value for studying local social development and folk customs.
