Xing County is located in the northwest of Shanxi Province and the northern end of Luliang City. Historically, it was a place where the Hu and Han people lived together. Since the Han Dynasty, the northern nomadic peoples Xiongnu, Xianbei, Jie, Shi, and Qiang have invaded or migrated to various places in Luliang for a long time, and also brought advanced sesame oil pressing techniques to the local area. According to the "Luliang Folk Customs", in 410 AD, the noble Erzhu of the Xiurong tribe of the Xianbei people established the Xiurong Kingdom with Lan County as the center. When the Xianbei people settled in Xing County, they brought wild sesame, yellow mustard, lower hemp seeds and other oil plants into Xing County for cultivation, which was developed on a large scale. But at that time, sesame was only the staple food of the Xianbei people. After the Song and Yuan Dynasties, with the increase of Xing County's grain plants such as millet, corn, sorghum, millet, naked oats, buckwheat and other crops, sesame and small hemp seeds began to withdraw from the ranks of staple foods and were replaced by oil pressing. The Bai family in Maodi Village is the most typical example of sesame oil pressing in Xing County. After generations of continuous practice, the Bai family's ancestors created the method of "three-legged small oil pressing", which has been passed down from generation to generation. The Bai family's sesame oil pressing technique uses sesame, hemp seeds, and yellow mustard as raw materials. After frying, they are ground with a stone mill at low temperature, sterilized at high temperature, steamed and hydrated, and pressed manually. The characteristics of the technique are: first, the roasting and proportioning of the raw materials; second, the amount of steamed oil, the temperature, and the length of time; third, the lump packaging requires that the oil should be even, the surface should be flat, and the lump mouth should be tight; fourth, the upper hammer should be stable during pressing, the force should be uniform, and the pressure should be intermittent, which not only ensures uniform oil output, but also prevents the equipment from being damaged too quickly. The sesame oil pressing technique of Maodi Village in Xing County embodies the wisdom and creativity of our ancestors. Its process is rigorous and unique, and has important research value for edible oil pressing technology.
