Pingyuan Old Tofu has been a traditional delicacy for hundreds of years. Its characteristics: the soup is carefully boiled with many seasonings, the tofu is white and bright, tender but not loose, the sauce is clear but not light, the oil is fragrant but not greasy, it has a meaty taste but not fishy, and it has a spicy taste but not choking. When Emperor Qianlong passed through Pingyuan during his trip to the south of the Yangtze River, he praised it highly after tasting it, and ordered the old tofu artists to help in the imperial kitchen. From then on, Beijing Old Tofu was born. Dezhou and many surrounding counties and cities all hang signs of Pingyuan Old Tofu to attract business.
