Traditional craftsmanship of Suining tofu

In order to improve the dietary structure of Sun Quan's mother, Wu, the chef of the kitchen found a bag of tofu from a farmer in Yaojiaxu Village, south of Xiapi one day, and processed it into several soups after cooking. After his mother enjoyed it, she felt soft and delicious, and her appetite increased greatly. She asked: "What is it?" The chef replied: "It is Pi'nan farmer's tofu." After eating it for another two days, Quan's mother's milk was full. Little Sun Quan was fed innocently and lively. Then he told the chef to make "Pi'nan tofu" every day. Suining tofu making has a long history and is a typical representative of traditional handicrafts. Tofu is made of soybeans, water and brine as the main raw materials. The whole processing process includes: selecting beans, soaking, grinding, foaming, squeezing, boiling, transferring, brine, taking out of the tank, pressing and other procedures. The soybean raw materials used for Suining tofu are mostly local spring-sown soybeans, medium and late-maturing varieties with black navels, and the water is mostly mountain spring water from Jiaolong Mountain in Pi'nan or deep well water at the foot of the mountain. The first product of Suining tofu is milky white and delicate, clean and flawless. It is easy to form a sharp color contrast when cooked with other dishes. It has a rich taste, moderate softness, freshness and deliciousness. Eating less is not enough, and eating more is not greasy, so that "every time I think of this taste, I can't help but salivate." Suining tofu is a most primitive handmade craft. It not only shows the outstanding talent of Suining people in processing original ecological food, producing a low-energy, pollution-free, and purest green food, but also reflects that the vast majority of farmers have had cooking techniques to create different delicacies since ancient times, providing rich original materials for the research of food processing and farm dishes today.
