The "traditional tofu making skills" are widely spread in Tai'an area and have an impact on the whole country. They are a typical representative of the Chinese nation's custom of eating tofu. The history of Taishan tofu making is long. The "Tai'an County Chronicles" revised during the Qianlong period once recorded: "In the early morning, the streets are filled with bangzi, and in the evening, every household has a tofu shop. Tofu has gradually become a favorite dish of the people. Protecting and inheriting the traditional tofu making skills of Taishan and promoting excellent traditional culture are of great significance to promoting the development of culture and tourism. Taishan tofu eating customs have a long history. It integrates Confucian culture, Taishan culture, and health culture, forming a food custom with tofu containing beautiful meanings. It is an inseparable and important part of Taishan culture, deeply loved by the people, and has significant social value. Tai'an has brought tofu to its extreme due to historical reasons and the advantages of local products. Tai'an has three beauties, "tofu, cabbage, and water". More than 180 dishes such as "Taishan Tofu Meatballs", "First-class Tofu", and "Hibiscus Tofu" cooked with tofu as the main ingredient have become the favorite dishes of the people. Through collective inheritance and master-apprentice inheritance, the tofu that was used by the ancient emperors to fast during the Fengshan ceremony at Mount Tai has been brought to the public table and given a distinct regional food culture under certain conditions. On the first day of the Lunar New Year, there are tofu dumplings that pray for the safety of the whole family and that simplicity is a blessing; on Qingming Festival, there are tofu mixed with tender willow leaves to pray for the sincerity of the ancestors and grandchildren; tofu and fish that pray for "abundant blessings" in the New Year; and tofu and bean sprouts that are given by family members when they move into a new house to express their desire to live in a blessed place and take root and sprout. The custom of tofu is no longer simply "eating tofu". Tofu was once the protagonist of the emperors' Fengshan ceremony at Mount Tai and is a precious historical culture. It has also become the iconic business card of Mount Tai and is recognized and loved by the people. The custom of tofu in Mount Tai follows the principle of "everything changes but never deviates from the essence", with tofu as the main ingredient and other ingredients as supplements. Through the display of tofu dishes under certain conditions, it expresses people's positive and positive wishes to pursue a happy life. The special dishes of Taishan tofu include: "Three Beauties of Taishan" for welcoming guests, "Spring Water Tofu" for housewarming, "Taishan Tofu Meatballs" for Spring Festival Eve, "Taishan God Tofu" for worship and blessing, "Taishan Tofu Dumplings" for New Year's Day, "First-class Tofu Soup" for promotion congratulations, "Auspicious Blessings" for wedding banquets, "Sharing Blessings" for the elderly's birthdays, "Young Willow Leaves Mixed with Tofu" and "Coriander Tofu Cubes" for Qingming Festival ancestor worship, and "Nine Turns of Blessing Intestines" for health preservation. In 2021, the State Council announced the fifth batch of national intangible cultural heritage representative projects, and Tai'an City's "Traditional Tofu Making Techniques" were selected.
