Beijing Guixinzhai Pickle Factory, located at No. 50, Nanheng West Street, Xuanwu District, Beijing, is a southern-style pickle factory with a long history. Guixinzhai Pickle Factory was founded in the first year of Emperor Qianlong's reign in the Qing Dynasty (1736), and its original site was at the south entrance of Tiemen Hutong, Luomashi Street, Xuanwu District, Beijing. According to legend, "Guixinzhai" was originally opened by a southerner, and then transferred to the Shen family for operation. Shen was once a disciple of "Guixinzhai" and learned the skills of making pickles. After he took over "Guixinzhai", he insisted on the principles of selecting raw materials, fine workmanship and small profits but quick turnover, so his business became better and better. Because "Guixinzhai" is good at making winter vegetables, pickled mustard and Buddha's hand knots, it is known as the "old winter vegetable shop". During the Qing Dynasty, the pickles of "Guixinzhai" were appreciated by the imperial kitchen of the palace, and they were given a "waist card", a white hat with red tassels, and a black jacket, which allowed them to enter the palace to deliver vegetables. The founders of Guixinzhai were a couple who came to Beijing from the south to make a living. This also determines the flavor of Guixinzhai. Guixinzhai belongs to the southern soy sauce factory. The storefront of Guixinzhai in Tiemen Hutong is not big, with two storefronts, which are very clean. A large plaque with black background and gold characters hangs in the middle of the storefront. Guixinzhai adopts the form of front shop and back field. There is not only Guixinzhai in Tiemen Hutong, but also other famous ones such as Lanxinzhai at that time. Because there are many soy sauce factories, there are also many wells in the hutong. "Yandu Congkao" says: "There are about 72 wells in the hutong, and there are often wells even in the rooms. There are many soy sauce factories in the area, which need a lot of water, which is probably because of this." But today, the wells in Tiemen Hutong have disappeared, and the old traces of Guixinzhai no longer exist. The Nanfang couple who first founded Guixinzhai later passed on their skills to an apprentice named Shen. After Shen took over, he built a handicraft workshop in the Cikang Temple area of Tiemen Hutong. The pickles were made finely and soon became famous in Beijing. During the reign of Emperor Guangxu, Guixinzhai was granted a waist badge as a special license to deliver food to the palace. Since the 30th year of Emperor Guangxu (1904), Guixinzhai has further expanded its scale, and has opened three branches, namely Nanguixinzhai, Guixinzhan and Guixindongji, and also has a large-scale factory in Dachuandian. The old Guixinzhai store is located in Tiemen Hutong, and many people call it "Tiemen Sauce Garden", and have forgotten the name "Guixinzhai".
