White tea is one of the six famous teas in China. It is named for its plump buds, covered with white hairs, and looks like silver and snow. White tea originated in Fuding, and its full name is Fuding white tea. Its main varieties include Baihao Yinzhen, Bai Mudan, Gongmei (Shoumei) and newly developed craft white tea. The main tree species producing white tea are Dabaicha, Dahaocha and Caicha. The "Green Snow Bud" of Taimu Mountain in Fuding is the mother plant of Fuding white tea. After thousands of years, it has absorbed the essence of heaven and earth and is a treasure among teas. Fuding City, the origin of white tea, is located in the northeast of Fujian Province. Among the 560,000 people, 350,000 people are involved in tea. Tea industry is one of the pillar industries of Fuding City's economy. All 17 towns in the city produce white tea, with a total tea garden area of 200,000 mu and an annual total output of 15,000 tons. The tea gardens producing Fuding white tea are mainly distributed in 17 towns around the Taimu Mountain Range in the national scenic area, including Diantou, Panxi, Bailin, Guanyang, Dieshi, Guanling, Qianqi, Jiayang, Dianxia, Qinyu and Xiamen. The enterprises and folk workshops in each town have retained the unique techniques of white tea making. White tea is a slightly fermented tea with a unique production method. It is not fried or kneaded, but dried with a slow fire. With moderate natural oxidation, it retains rich active enzymes and polyphenols. Among them, "Baihao Yinzhen" takes fat single buds as the main raw material, "Bai Mudan" takes one bud and one leaf or two leaves, and "Gongmei" (Shoumei) takes one bud and two or three leaves as the main raw material. The primary process of white tea includes fresh leaves, withering, piling, drying, and picking. The main processes are withering and drying. Withering is divided into natural withering and compound withering. The refining process includes: raw tea, picking (hand picking), genuine tea, uniform piling, baking, and boxing. Affected by the temperature, the white tea making techniques are divided into normal climate primary making and abnormal climate primary making. The abnormal climate primary making adopts methods such as "80% dry" withering, "60% dry" withering and heated withering. The white tea soup is apricot yellow, clear and bright, with a clear aroma, fresh and mellow. The accompanying tea art performances, such as washing utensils, adding tea leaves, flushing water, appreciating tea, smelling the fragrance, and tasting tea, are full of unique aesthetic connotations.
