Shitai Wuliqing green tea making technique is the traditional green tea making technique of Shitai County, mainly in the southern Anhui area, especially in Shitai (formerly known as Shidai, changed to its current name in 1965). Wuliqing tea garden is located in the high mountain clouds at an altitude of 1,000 meters, and is shrouded in clouds all year round, so the locals call this tea "Wuliqing". Ma Duanlin's "Wenxian Tongkao" records: In the Song Dynasty, there were 37 famous teas in the country, among which "Nenrui" was what the locals called Wuliqing. The great poet Lu You of the Southern Song Dynasty and the writer, calligrapher and painter Xu Wei of the Ming Dynasty have related records in their works. It can be seen that the Shitai Wuliqing green tea making technique has a history of thousands of years. Shitai Wuliqing is an old variety of leaf storage in southern Anhui, made from fresh leaves picked from wild tea tree communities over a hundred years old. Its production technique is very sophisticated, using high mountain cloud tea leaves, and carefully made through 37 processes according to 10 traditional hand-made techniques of shaking, belting, squeezing, throwing, straightening, expanding, buckling, grabbing, pressing, and grinding. After the Wuliqing tea is formed, it is sorted by hand, leaving only one green and hairy bud. Every 500 grams of Wuliqing finished tea has 20,000 to 25,000 buds, which is known as the "No. 1 bud in Anhui". The Wuliqing tea has plump and tender buds, with fine hairs, lasting tender fragrance, fresh taste, and bright light yellow soup. The full tea buds stand upright in the cup, floating up and down; there is also a wisp of white mist rising up, which lasts for a long time.
