Dashunzhai
Beijing Dashunzhai, located in Dongwei Village, Tong County (formerly Tongzhou), the source of the Beijing-Hangzhou Grand Canal, is famous in Beijing for its sugar-coated steamed buns and halal cakes. Dashunzhai was first built during the Chongzhen period (around 1640) and has a history of more than 350 years. The founder, Liu Dashun (a Hui Muslim), came to the north from Nanjing Shangyuan with a grain transport ship to make a living and settled in Tongzhou. He first walked the streets and alleys, carrying a load and hawking sugar-coated steamed buns and fried fruits. Later, he opened two shops in the Anjia courtyard on South Street and named them "Dashunzhai", one inscribed with Liu's shop and the other with Qiu's shop. The business went smoothly and became more and more prosperous. During the Qianlong period of the Qing Dynasty, 5 houses were purchased in Huimin Hutong near the downtown area, 2 of which were used as storefronts and 3 as workshops. In addition to retail sales, the products were also wholesaled to vendors. In the late Qing Dynasty, under the painstaking management of Liu Jiuba, the sixth-generation grandson of Liu Dashun, Dashunzhai entered its heyday and established 4 branches: "Dalaihao" in Tongzhou, "Dashenghao", "Daxinhao" and "Daxinghao" in Beijing. Dalaihao provided Dashunzhai with flour, sesame paste and other raw materials for making sugar-fired cakes and cakes. Other branches mainly sold Dashunzhai sugar-fired cakes and cakes, and also sold daily necessities such as oil, salt, sauce and vinegar. After 1900, the business tended to be depressed. In the first year of the Republic of China (1912), Dashunzhai in Tongzhou was burned down during the war. Although it was rebuilt that year, it was already seriously damaged. Since then, wars and banditry have occurred repeatedly, people have been living in poverty, and the enterprise has gradually declined. Starting from 1949, with the support of the people's government, Dashunzhai's production and operation have been restored. In 1955, the store took the lead in implementing public-private partnership, and production has developed. During the Cultural Revolution, Dashunzhai, which had just entered the formal stage, was once incorporated into the Tongxian Food Factory. After 1979, under the situation of reform and opening up, the old brand was reborn, and Dashunzhai resumed independent operation. Since the restoration of the old brand, Dashunzhai has moved its address, expanded the factory, added equipment, built a sales department, and set up a franchise point, forming a halal pastry manufacturer of Chuju scale. In 1990, compared with 1987, fixed assets increased by 31.5 times, output increased by 13.7 times, profits increased by 16.2 times, and the number of employees reached 168. There are retail outlets and 3 Hui Muslim franchises in Tongxian Town, more than 30 Dashunzhai pastry counters in Beijing, and some products are also sold to other cities. The production has reached 165 varieties, 15 of which are traditional flavor products. Among them: five varieties, including sugar fire cake, jujube paste crispy skin, walnut crispy, jujube paste self-made red, and jujube paste oil crisp, have been rated as municipal quality products.
