Lotus root powder is a traditional nourishing food with a long-standing reputation. It is rich in nutritional value, has good medicinal effects, tastes delicious, and is sweet in the mouth. It is suitable for all ages. Shaoxing is a water town in the south of the Yangtze River. It has a history of more than 2,000 years of planting lotus roots and making lotus root powder. Keyan Street, Qixian Town in Keqiao District, and Dongpu Town in Yuecheng District all have the tradition of planting lotus roots and making lotus root powder. In the 1960s, the annual output of lotus root powder in Shaoxing reached about 100 tons, which was once famous in East China. In the northern part of Shanyin, Kuaiji, people have been enclosing land for a long time. The local hardworking people have planted lotus roots in the low fields, ponds, river beaches, and depressions that have been flooded all year round, and this has continued to this day. There is also a custom of rubbing lotus root powder for generations, which is a famous "lotus root town" in Shaoxing. According to the "Shennong Bencao Jing", lotus roots have the effect of promoting blood circulation and dispersing blood stasis, eliminating heat and promoting body fluid, especially for postpartum women. It has the effect of accelerating the recovery of the body, and is deeply loved by people. Lotus roots are rubbed into powder, which is more popular and sold to Hangzhou, Ningbo, Nanjing, Suzhou and other places. It has a history of nearly 200 years. Lotus root powder has always been made by hand. Generally, lotus roots are dug after the "Cold Dew" has passed and the leaves and stems have withered and shriveled. Experienced lotus root farmers can dig out a complete lotus root from the mud along the dried lotus stems. Beginners often cut the lotus root, so that mud will flow into the hole, which makes it difficult to wash the lotus root. When washing in clean water, the lotus root nodes must be cut off. Then the white, plump, and round lotus root segments are put into a basket. Then, the most important process is to rub the powder. The tools for rubbing the powder are slightly different in ancient and modern times. In ancient times, a bamboo basket was placed in a large wooden barrel or a large wooden basin, and the lotus root segments were pinched by hand and rubbed back and forth vigorously. This was a very laborious and time-consuming process. After the lotus root is rubbed into crumbs, it is filtered through several layers of summer cloth, and finally filtered again with a fine gauze sieve to remove the lotus root residue. The starch will slowly sink to the bottom. After the sediment is solid, pour out the floating slurry. After a while, use a copper ladle for rice to gently scrape the powder into small thin slices, put it in a bamboo drying dustpan, and dry it in the sun to make lotus root powder. Nowadays, the production of lotus root powder has changed from the past "manual rubbing" to "mechanical crushing", and there is no other way. After the lotus root powder was dried, it used to be sold in bulk. In recent years, in order to improve the brand of lotus root powder, it has been packaged in bags and boxes, printed with labels, and packed for export. The "lotus root powder making technique" was selected into the sixth batch of Shaoxing City's intangible cultural heritage list in November 2015.
