Xuhe pig head meat production technique, a traditional skill project in the fifth batch of representative projects of municipal intangible cultural heritage. It originated in the late Qing Dynasty and early Republic of China, and originated from the production process of folk smoked and sauced food. Commonly known as shao lazi (sound), folk smoked and sauced food, smoked pig head meat. After nearly 120 years of technological evolution, it has gradually become different from the traditional smoked and sauced products.
