Nantong Dagao Steaming Technique is a traditional skill project in the fifth batch of representative projects of Nantong Municipal Intangible Cultural Heritage. The steamed rice cakes of Nantong people are called "Dagao". In Nantong, there is a custom of eating rice cakes during the Spring Festival. The sweet and sticky rice cakes symbolize a sweet life in the new year and a step-by-step improvement. As an important component of the New Year customs, the big cakes are steamed in eight steps: soaking rice, beating flour, mixing flour, steaming, steaming flour, shaping, cutting, and storing the cold cakes. The rice cakes that have just come out of the cage should be quickly cut with a soaked shoe string while they are hot. One cage is divided into twelve pieces. Pick out the most square and full ones to pay tribute to the ancestors, and then cut small pieces and dip them in sugar to share with elders, children and neighbors. The cut rice cakes should be placed on a bamboo plate to dry until the surface becomes shiny and slippery before they can be collected and stored. After the rice cake is completely dried and hardened, soak it in alum water or twelfth lunar month rain water, and it will not crack or mold easily.
