There are several families in Heping Town, Shaowu City, Nanping, who make tofu for a living. Their tofu is different from others. Traditional tofu is made with either gypsum or brine, but they do not use either gypsum or brine. They just leave a little bit of soy milk from the previous day. When cooking soy milk the next day, they stir the soy milk in the big pot and slowly inject the old soy milk left yesterday. The old soy milk is used as yeast to make tofu. This kind of tofu is called "swimming tofu". This kind of tofu is tender and refreshing, and will never have any side effects on the human body such as gallstones. It is a real green food. The unique production process of swimming tofu is unique. In 2007, "Shaowu Heping swimming tofu production process" was included in the first batch of Nanping City's municipal intangible cultural heritage representative works.
