Fengrun Qishuzhuang sesame candy was first created in the fourth year of Wanli in the Ming Dynasty (1577). It was carefully developed by taking the advantages of the "soft and hard chops" food loved by the people of Jidong and learning from the "candied fruit" pouring method in Beijing. During the Republic of China period, Zhang Fengwu, one of the descendants of the Zhang family, founded "Guangshenghao". His descendants Zhang Jinhai and Zhang Guorong have passed down this traditional craft and brand name to this day. For more than 400 years, Qishuzhuang "Guangshenghao" honey sesame candy has been famous throughout the country and abroad for its exquisite craftsmanship, unique flavor and good reputation. The basic ingredients of Fengrun "Guangshenghao" sesame candy: refined flour, peanut oil, sesame oil, high-quality honey, white sugar, sugar osmanthus, etc. The production method of Fengrun "Guangshenghao" sesame candy is as follows: First, dough preparation: dissolve white sugar in water and add flour. After dipping in water and stirring repeatedly, a dough with good gluten and moderate hardness is formed; second, rolling and pressing: roll the dough into a film with a diameter of about 0.5 meters, and complete multiple rolling, rolling, patting, shaking, and rolling within 34 minutes to form a 2.7-meter-long and 2-meter-wide paper-thin dough sheet, which is then "inflated", "shaped", "shaped" and other processes. The first step is to roll the dough on the "flower shoulder"; the second step is to form the net flower: break the dough into 1 cm wide noodles, stack them up to 1517 layers, chop each strip diagonally into 35 3 cm wide diamond-shaped pieces, chop a cut in the middle of each piece and roll it up, and make a net flower on one end to form the raw dough; the third step is to refine the peanut oil and add sesame oil, put it into the raw dough and fry it until it turns golden yellow; the fifth step is to burn the slurry: add appropriate amount of water to dissolve the white sugar, add osmanthus, honey, candied sugar, etc. after boiling it into slurry, and stir it. After pouring the slurry twice, it is the finished product. Fengrun "Guangshenghao" sesame candy has a fluffy and transparent appearance, thin and even layers, and vivid and attractive shapes and colors; it tastes fresh and soft, sweet and not greasy. Historically, the production skills of Fengrun "Guangshenghao" sesame candy have been passed down from man to man, not from woman to woman, and not from outsiders. Therefore, the number of inheritors is extremely limited, the scope of inheritance is not enough, and the scale of production is not large.
