Honey Hemp Candy Production Technology (Selected into the third batch of provincial intangible cultural heritage list of Hebei Province in 2009) The "King Bee" honey hemp candy produced by Tangshan Xinxin Hemp Candy Factory is a local traditional flavor and a Tangshan specialty. Due to the complicated and delicate manual operation skills, and the raw materials used are all made of pure natural materials, it is deeply recognized and loved by consumers and is known as the "Hemp Candy King". The history of the prototype of hemp candy can be traced back to the Wanli period of the Ming Dynasty (1577). The development of the prototype to the current Xinxin honey hemp candy was first created in Tangshan in the 1930s (1931). It has been passed down and continued to this day. For hundreds of years, it has been a must-have for home travel and gifts to relatives and friends. Tangshan Xinxin Hemp Candy Factory was recognized as a "Chinese time-honored brand" by the Ministry of Domestic Trade in 1999; it was recognized as a "Chinese time-honored brand" by the Ministry of Commerce in 2010; the "honey hemp candy production technology" was included in the Hebei Province Intangible Cultural Heritage List in 2009. The honey sesame candy produced by Xinxin Sesame Candy Factory has the longest history, the best quality, the most sophisticated technology, the largest market share, and the best reputation among the people. This project belongs to traditional handicrafts, and all the products are handmade. The introduction is as follows: The first step is to prepare the dough. It must be prepared with wheat flour with high gluten content, and then rolled after proofing. The rolling process is the most critical and difficult handicraft in the production of sesame candy: a dough weighing 400g is rolled five times by rolling, rolling, patting, pushing, shaking, and releasing, and then unfolded to form a large dough sheet of 2mx3m. It is as thin as silk and almost transparent. If a newspaper is placed under this dough sheet, the text on the newspaper can be seen through the dough sheet (see attachment). This process must be completed quickly and must be done in one go, otherwise it will be damaged and affect the next process. Next, through the processes of chopping and turning flowers, a semi-finished flower-shaped product with about 15 layers is formed, which is fried and matured in the next process. When frying, the vegetable oil is refined and purified in advance to remove impurities, and fried at a medium heat of about 120 degrees to ensure that the product is light golden in color, mature inside and outside, and the flower shape does not fall apart. After controlling the remaining oil, enter the lubrication process. The syrup is made by boiling white sugar, pure honey, sugar osmanthus and water. The concentration of the syrup is adjusted accordingly according to the changes in temperature and humidity in different seasons of the year. When lubricating, it should be scooped and placed gently. After cooling, it will eventually form a crystal clear product that resembles a jade carving. These hand-made techniques are the crystallization of the experience and wisdom of generations of hemp candy inheritors, and are the embodiment of generations of hemp candy masters' continuous development and improvement of traditional skills, thus creating this Tangshan specialty Xinxin honey hemp candy with a unique flavor, which is deeply loved by the people and has been selling well for hundreds of years.
