Qinyou Dongtang making technique
Dongtang making technique (Qinyou Dongtang making technique) Qinyou Dongtang was carefully developed by Dong Lin (from Gaoyou), a Jinshi in the Yongle period of the Ming Dynasty, to honor his loving mother. It has been passed down for more than 550 years. The Qianlong edition of Gaoyou Prefecture Records notes under the entry of "Loaned Dongtang" that "it is named after the Dong surname". The "Qinyou Bamboo Branch Poems" by Gaoyou poet Webson in the late Qing Dynasty said, "A bag of sweetness is hidden in it, and many people say that Dongtang is good. There is no other place except Qinyou, and relatives and friends send gifts every basket." The raw materials of Qinyou Dongtang are produced based on the water and soil conditions of Gaoyou. The product is developed from the kindness and virtue of Confucian scholars. The craftsmanship is entirely due to the founder's insight, and it is refined by the optimization of successive workshop owners and factory technicians. It is famous for its unique taste of crispness, softness, fragrance and sweetness. It has won honors at the Nanyang Industrial Exposition, the first China Food Expo and the West Lake International Food Expo. It has unique ingredients, and the processing of barley malt, maltose, fried noodles, and sesame seeds requires extremely high technology. The proportion of the sugar core is kept secret, and it is a very special local intangible cultural heritage. The process of Qinyou Dongtang is complex and delicate, reflecting the rich imagination and creativity of the people, and contains unique scientific and technological genes. Its production skills essentially pursue the sweet, soft and exquisite connotation of Jiangnan culture, and it is a typical example of Jiangnan culture relying on the market and moving towards life. Its research and development has implemented the Confucian food culture tradition of never tiring of fine food. This kind of folk casual side dish has warmed generations of people with its sweet and fragrant taste in family adjustment, social contact, and especially in respecting relatives and children.
