Rice noodle making technique (Guilin rice noodle making technique), a traditional technique of Guilin City, Guangxi Zhuang Autonomous Region, is one of the national intangible cultural heritages. Guilin rice noodles have a long history. They flourished in the old Guilin City from the late Qing Dynasty to the Republic of China, and were widely spread due to the arrival and departure of a large number of cultural celebrities and people from other places during the Anti-Japanese War. Guilin rice noodles are produced with rice produced in various counties of Guilin and the water of the Lijiang River flowing through Guilin as the basic raw materials. The brine boiled with the historical inheritance formula of the old shops in the urban area is the soul, and the brine powder is the most widely spread. According to legend, during the Qin Dynasty, Qin Shihuang sent General Tu Sui to lead the army to attack Lingnan through Guilin. Because there were many northern soldiers in the army and they were not used to southern rice, the soldiers' appetite decreased sharply and the morale of the troops was low. In order to ensure the normal march of the army, the generals of the Qin army came up with a way to "make southern grains in the north" and process rice into food with a shape and taste similar to noodles, which was welcomed by the soldiers, and the prototype of Guilin rice noodles was formed. Due to long-term marching in the southern jungle, many Qin army soldiers suffered from heatstroke, colds, malaria and other diseases. In order to treat the soldiers, the military doctors boiled traditional Chinese herbal medicines with local spices provided by the local Yao people to make anti-epidemic medicine soup for the soldiers to take. Due to the tense war, the soldiers often ate rice noodles and medicine soup together. Over time, the medicine soup became the cone of Guilin rice noodle brine. After generations of improvement and processing, the medicine soup has become the unique Guilin rice noodle brine today. Because Guilin rice noodles were founded in the war, it was impossible for the soldiers to make fire for three meals a day, so the side dishes of Guilin Laifen naturally chose to be mainly stewed dishes. Because of the tense war at that time, the soldiers would kill war horses to relieve hunger at extraordinary times, so horse meat rice noodles later became a major category of Guilin rice noodles. During the Republic of China, especially during the Anti-Japanese War, Guilin rice noodles became famous. Horse meat rice noodles and dandan rice noodles began to be widely known. On May 24, 2021, the rice noodle making technique (Guilin rice noodle making technique) was approved by the State Council of the People's Republic of China to be included in the fifth batch of national intangible cultural heritage representative project list, heritage number: -277.
