The traditional brewing techniques of Hongyuan Liquor have their own remarkable characteristics: First, the whole process is manually operated, from stepping on Qu to steaming wine, it needs to go through dozens of processes, and these processes are all completed by manual operation, rather than using machines to replace manual labor. Second, the raw materials, whether it is koji making or steaming wine, all use the fresh raw materials that have just been harvested that year, with high quality, including new wheat, new sorghum, and new bran. Only by ensuring the freshness of the raw materials can the freshness of the wine be guaranteed. Third, the groundwater within the old wine shop must be used. Water is the mother of wine. The quality of local liquor depends on the raw water of the wine. Hongyuan Old Wine Shop uses the groundwater in the wine shop from stepping on Qu to steaming and blending. Fourthly, the wine must be distilled strictly according to the season, and the temperature and humidity must be strictly controlled. The fermentation period of the raw materials cannot be advanced or delayed.
