Fuliji Roast Chicken Production Technique
Fuliji roast chicken originated in the Han Dynasty. In 1994, the tomb of Liu Wu, the King of Chu in the Han Dynasty, was excavated at the western foot of Lion Mountain in Xuzhou. In the tomb, there were chicken bones that were basically well preserved, and there was a seal of "Fuli Cheng Yin". Therefore, it was identified by archaeological experts as "Fuli tribute chicken". In 1757, Emperor Qianlong passed through Fuli during his second southern tour. Zhang Kaishi, the governor of Suzhou, presented Fuliji stewed chicken as tribute, and Qianlong praised it after tasting it. Therefore, it can be inferred that Fuliji roast chicken has a history of more than 2,000 years. Since Fuli is located on the main road between the north and the south, hundreds of wars and killings have occurred here since the Han Dynasty, and people have been displaced. The roast chicken process can only be intermittent. Fuli roast chicken is made from Fuli-produced hemp chicken, which is a unique variety with a unique flavor. In 1910, Guan Zaizhou, a Shandong native, fled to Fuli. He used the production technology of Dezhou Braised Chicken and combined it with Fuli hemp chicken as raw materials to form "Guanjia Red Yeast Chicken". In 1915, Wei Guangming from Henan created a new generation of "red yeast chicken", which became famous for its beautiful shape, color and fragrance. In 1917, Han Jingyu from Fuli combined the expertise of Guan and Wei's stewed chickens, and under the guidance of the famous Chinese medicine doctor Lv Maolin, after years of practice, created a roast chicken with excellent appearance, fragrance, taste and shape, named "Han's Roast Chicken". After being tasted and promoted by tourists, it became the "Fuliji Roast Chicken" that is famous all over the world today. Since the reform and opening up, the production of Fuli roast chicken has developed rapidly, from an annual output of hundreds of thousands in the 1970s to an annual output of more than 5 million in the 1990s. Entering the new century, a number of modern roast chicken production enterprises such as Liu0, Huixiangyuan and Zhonghua have been formed, with an annual processing capacity of more than 20 million. The products are sold to Russia, South Korea, Japan, the United States, Hong Kong and Southeast Asia, as well as more than 100 large and medium-sized cities across the country, and have become the most famous brand in the food industry of Yongqiao District.
