Jizhou is located in the middle reaches of Ganjiang River and the center of Jitai Basin. It has fertile land, abundant water resources, and abundant rice. The brewing industry has been prosperous since ancient times. According to the "Ji'an Prefecture Chronicle", Jizhou has been "brewing in style" since ancient times. Brewing workshops are all over the city. People have to entertain guests when they get married and "drink and leave". In the old days, the wine brewed in Jizhou was commonly known as "Gu Shao" and "Shaojiu", that is, white wine. Duihua wine is said to be named after the praise of the national hero Wen Tianxiang. In the early years of Baoyou in the Southern Song Dynasty, the young Wen Tianxiang studied at Bailuzhou Academy. One day, he was invited by his schoolmates to drink at a restaurant on Xianqian Street. When the bartender poured the wine, the white flowers in the cup were stacked up layer by layer, and the mellow fragrance was overflowing. Wen Tianxiang couldn't help but praise again and again: "What a good Shaojiu! The aroma is fragrant, and the layers of flowers are piled up!". Later, Wen Tianxiang led his army to fight against the Yuan Dynasty and became a household name as a national hero. He was defeated and captured. On the way from Guangzhou to Dadu, the boat passed through Ji'an. The elders of his hometown offered him a sacrifice with their hometown liquor by the Ganjiang River to express their admiration for him. Later, in order to commemorate Wen Tianxiang's righteousness, the liquor brewed in Jizhou was renamed "Duihua Liquor". Duihua Liquor produced by traditional craftsmanship is clear and transparent, with a mellow and medicinal aroma, and is sweet and lingering in the mouth.
