Brewing wine brewing skills (Houcheng rice wine brewing skills) expansion rice wine is mainly semi-dry and semi-sweet. Semi-dry rice wine is represented by Zhejiang Guyue Longshan, and semi-sweet rice wine is represented by Zhangjiagang Houcheng rice wine "Shazhou Youhuang". Houcheng is located in Jingang Town, Zhangjiagang City. As early as the Ming Dynasty, farmers in Houcheng area had already been very common in brewing wine. In the 12th year of Guangxu in the Qing Dynasty (1886), Tang Jintao, a Jiangyin native, bought land and built a house in Houcheng, introduced Yanmu rice wine, and opened Tang Hengyuan Winemaking Distillery. The wine brewed by Tang Hengyuan was orange-yellow, clear, delicious and mellow, so Houcheng rice wine became famous. In 1939, Tang Hengyuan's accountant Chen Yaoshu left the Tang family and opened his own distillery. Since then, Houcheng has successively opened distilleries such as Dingyuanlong, Yongyuanfeng, Yongyifeng, and Yunju. After liberation, the Houcheng winemaking workshops were merged into the "State-owned Houcheng Winery" in the 1960s. After the mid-1970s, Houcheng Winery optimized and improved the production process of semi-sweet rice wine, forming a new rice wine variety, namely "Shazhou Youhuang".
