Buyi and Tai Village are located in the Jiangnan Water Village, surrounded by dense water networks and rich freshwater fish resources. Every summer, lotus flowers bloom and red water chestnuts fill the ponds in many rivers and ponds in the village. In the early 20th century, Chen Yueming, the founder of Tai Village Xiaoxing Fish Balls, who was born in a cooking family, imitated the characteristics of the water village specialty "Yuanbao Water Chestnut" with a concave belly, raised corners, and a waist-like shape. He used local high-quality black carp and grass carp meat as the main raw materials to imitate the production of waist-shaped fish balls and achieved initial success. Since the 1930s, his son Chen Zhilin has inherited his father's business and further improved the appearance and production process, gradually creating a reputation in the local area. Chen Guofang, the son of Chen Zhilin, has been learning how to make waist-shaped fish balls from his father since the 1960s. He continued to work hard on the shape, color, and taste, forming the current style of unique appearance, delicate and tender taste, fragrant meat, and delicious soup. He also opened the first local fish ball store "Tai Village Xiaoxing Fish Balls" in Buyi. In 2007, Chen Guofang made kidney-shaped fish balls on site at Changzhou Mingdu Hotel, which won unanimous praise from the judges and won one of the "Mingdu Cup" ten special farmhouse signature dishes. In 2008, he registered the trademark for the "Taicun Xiaoxing Fish Balls" brand. In the same year, the "Buyi Fish Ball Making Technique" project, which mainly features Chen Guofang's kidney-shaped fish balls, was selected into the first batch of district-level intangible cultural heritage protection list of Wujin District (the original Taicun belonged to Buyi Town, so it was included in the list as "Buyi Fish Ball Making Technique". Later, due to district adjustments, the project was assigned to Zhonglou District). In recent years, while the inheritors of the project have been continuously improving the fish ball making process, they have also focused on project promotion and actively participated in various exhibition and sales activities organized by the government and all sectors of society.
