Processing and production techniques of Longpao crab roe soup dumplings
The processing and production skills of Longpao Crab Soup Dumplings are a traditional skill project in the first batch of representative projects of municipal intangible cultural heritage. Longpao Crab Soup Dumplings originated during the Qianlong period of the Qing Dynasty. At the end of the Qing Dynasty, Master Tao Ji of Huazikou Street founded the "Taipingchun Restaurant", inherited the traditional craftsmanship of crab soup dumplings and passed it on to Qin Youfa, Yi Chunbing and Shen 0 continued to operate it, and it was well received by diners. In the 1960s, Zhou Yuchun, the heir of Qin Youfa, took over the century-old store "Laohongyuan" and inherited and developed the crab soup dumpling craftsmanship. After entering the 1980s, restaurants such as "Six Eight Restaurant" and "Yangtze River Hotel" came into being, achieving good social and economic benefits. In 2004, with the care and support of the Municipal Catering Chamber of Commerce, the "Nanjing Catering Chamber of Commerce Longpao Crab Soup Dumpling Branch" consisting of 24 soup dumpling shops was established, making the Longpao Crab Soup Dumplings industry bigger and stronger, and famous at home and abroad. Longpao crab roe soup dumplings are famous for their thin skin, rich stew, tender filling, beautiful shape, fresh taste, fat but not greasy, exquisite material selection, unique ingredients, and exquisite craftsmanship. The production process is delicate and complicated, from the selection of crabs, steaming, boiling crab butter and skin soup and making skin jelly, and then from rolling the bun skin to the selection of filling ingredients, until the soup dumplings are successfully kneaded, there are a total of 33 processes. The finished product is small and exquisite, with a round bottom and 33 even folds on it. The golden crab roe is embedded in the center of the folds, like a stamen, and the shape is like an autumn chrysanthemum waiting to bloom. The steamed soup dumplings are crystal clear, fragrant, and the filling of the buns is clearly visible. When tasting, it is served with vinegar and shredded ginger. It is delicious and memorable. Longpao crab roe soup dumplings have been famous since the late Qing Dynasty. From the Republic of China to before and after liberation, many government officials, dignitaries, and literati came here to taste the crab roe soup dumplings and praised their unique flavor. After the reform and opening up, the quality of Longpao Crab Soup Dumplings has been getting better and better, and its reputation has been growing.
