The small naan made of eggs and flour is famous throughout Xinjiang for its dexterity, exquisiteness and delicious taste. The raw materials for making pastries are basically the same as those in the mainland, including flour, eggs, butter and sugar. During festivals, weddings or banquets, all kinds of exquisite pastries are carefully made for consumption. When visiting a Tatar family, the table will be filled with pastries and jams. The various pastries have unique shapes, and each pastry exudes an irresistible fragrance that makes people salivate. In the traditional pastry structure of the Tatar people, cheese, honey, milk, jam, butter and other ingredients have always dominated, and it has become a tradition to use these ingredients to make all kinds of pastries. Tatar pastries have unique tastes, ingredients and methods. They are not only rich in variety but also retain the original flavor and sufficient nutrition. In May 2021, the traditional Tatar pastry-making skills were selected into the fifth batch of national intangible cultural heritage representative list.
