Grandma Jiang's jelly was founded in Yanbian County in the last century, with a history of more than 60 years. Since its establishment, the store has passed on the characteristic flavor of Yanbian's local jelly, which is "spicy and refreshing". To make a bowl of jelly that is sweet, tender, and chewy, the ingredients must be high-quality Guichao rice. After washing, soak it in cold water for 10 hours. When the rice grains are full and break when pinched, you can use a pulping machine to grind the rice into rice slurry, and finally pour boiling water and add quicklime to make it. If you want to make good jelly, you must concentrate on the process of making it. Even an experienced chef may cause the quality of the jelly to be different due to a momentary negligence. When the rice paste is mature, simmer it on low heat for 3 hours before serving. Then wait for it to cool and form. It can be cut into strips or slices, and then paired with unique seasonings that conform to the local people's eating habits, such as chili oil, pepper oil, sesame oil, ginger and garlic water, soy sauce, vinegar, chopped green onions, salt, MSG, etc., and you can get a bowl of spicy, fragrant, chewy and refreshing ginger jelly! In July 2022, "Ginger Jelly" was announced by the Yanbian County People's Government as the fourth batch of Yanbian County's intangible cultural heritage list.
