Pingchuan people are particularly fond of sour food. Every family has a jar of pickled cabbage and a basin of rice water. They always have pickled cabbage all year round. The salty taste is particularly strong, sour and salty. Sweets are mainly Yuanxiao and Laozao. Whether in the mountains or in Pingchuan, every household will make Yuanxiao and Laozao around the Spring Festival in normal years. In addition to eating them themselves, they are also used to entertain guests or as gifts. Especially Laozao, nine out of ten rural women have it ready. People in this county also have a preference for bitter food (there is a high-yield vegetable called bitter melon, which is boiled and stir-fried as a dish. It tastes bitter and has a unique flavor). This hobby has not changed to this day. They like meat, and the way of eating it is slightly different in the mountains and Sichuan. People in the whole county generally like to eat pork. There is a saying in the countryside that "if you don't eat meat for a few days, you will feel anxious." The folks in Nanshan are particularly fond of meat. During the Republic of China, rich families would eat meat and wine; middle-class families would eat meat on the first and fifteenth day of every lunar month, which was called "Da Ya Ji"; poor families ate less meat, but sometimes they would carry firewood, sell grass, and cut meat to eat at home. Killing pigs for the New Year is a traditional custom. Except in years of famine, even poor farmers would kill pigs for the New Year. After liberation, the custom of killing pigs for the New Year became more popular. Except for temporary difficulties and the "Cultural Revolution", in other years, especially in recent years, it has exceeded any historical period. According to the seventh villager group of Zaolin Village, Xieshui Township, and the Shulin Crab Group of Xinjian Village, Xishenba Township, Nanshan, the number of households killing pigs for the New Year during the Spring Festival in 1985 was about 91. Most of the pork is eaten by themselves, a part is eaten during the Spring Festival, and the rest is smoked into bacon and kept for daily consumption. Smoked bacon has always been a common custom. In terms of the way of eating meat, Nanshan has a special style of eating meat, and the meat pieces are very large, called "wood comb meat" and "bar meat". When entertaining guests in places like Beiba and Nanhai, "Gaiwan meat" is indispensable. The meat slices are longer than the diameter of the bowl, and the two ends are placed on the edge of the bowl. Eating it can really satisfy your appetite and show that the host is sincere and honest. People in Pingchuan pay attention to fine cooking and do not cut large pieces of meat. They are used to cooking coarse grains skillfully and have a variety of local foods.
