In accordance with the "Provisional Measures for the Application and Assessment of Representative Works of Intangible Cultural Heritage in Shaanxi Province", after the application, review, and public announcement procedures, the Shaanxi Provincial Government approved and announced that the "Hengshan District Lamb Stew Production Technique" project applied by the Hengshan District Cultural Center of Yulin City will be included in the sixth batch of Shaanxi Province's intangible cultural heritage list. Hengshan mutton is the best in the world. Hengshan ground pepper mutton has been approved by the State Council as a national geographical indication protection product, and northern Shaanxi Hengshan mutton (Xiangcaoqing brand, Xiangcaoyuan brand, Shuangcheng Township brand) has been awarded the national ecological origin protection product. Hengshan mutton is a product with very local characteristics. It has the characteristics of tender meat, fat and lean, high protein, low fat, no mutton smell, rich fragrance, unique flavor, and significant health functions. It is known as the "ginseng among meats" and is deeply loved by people. It has become the main meal for Hengshan people to welcome guests. All guests who come to Hengshan must taste Hengshan's stewed mutton. When people mention eating mutton, they think of Hengshan's mutton banquet. When Chairman Mao Zedong moved to northern Shaanxi in 1947, he lived in Xiaoya Village, Weijialou Town, Hengshan District for 6 days. The landlord, Aunt Liang Jinlan, sent a bowl of stewed mutton to Mao Zedong and his family. Chairman Mao praised it highly after eating it: "Oh! Hengshan mutton is so delicious!" Hengshan is famous for its "hot plate mutton". Hengshan stewed mutton is made in seven steps: selecting meat, cutting meat, washing meat, removing foam, seasoning, turning meat, and serving.
