The production of "Yangjiao Old Vinegar" originated in the Ming Dynasty, and has a history of nearly 400 years. According to records, in the late Ming Dynasty, two brothers from Shanxi Province, Ren, fled to Yangjiao due to war and encountered an epidemic. They were rescued by the Qin and Zhou families of the local people. To express their gratitude for saving their lives, they passed on the ancestral secret recipe for producing vinegar to the Qin and Zhou families. Later, the Qin and Zhou families passed it on to the Cao, Tian, Huang, and Gao families. The current "Yangjiao Old Vinegar" producers are the fourth generation of descendants. Yangjiao Old Vinegar is made from rice and wheat as the main raw materials, supplemented with more than 40 kinds of precious Chinese medicinal materials, and made with the unique spring water of Yangjiao Town by traditional methods. It is rich in amino acids, glucose, maltose, fructose, organic acids, vitamins, and a variety of minerals and trace elements. It has more than 14 kinds of aroma components, has the advantages of moderate sweetness and sourness, rich aroma, delicious taste, and long-term storage without deterioration. It is an indispensable condiment in people's daily life. At present, the main vinegar products of the town are "Yangjiao Vinegar", "Yangcao Vinegar" and "Hualai Vinegar". The production process of "Yangjiao Old Vinegar" is a complete reproduction process of food culture, vividly reflecting the unique skills of inheriting history and technological innovation. The product is famous all over the world and is proudly called one of the "three treasures" of the hometown by the people of Yangjiao. It has also become a resounding business card of Wulong's intangible cultural heritage products.
