The main raw materials of Yuyao dried bamboo shoots are Chinese mustard and spring bamboo shoots. The quality of the raw materials will affect the quality. Dried bamboo shoots made from the raw materials produced in Fengcun taste the best because the water and soil there are particularly suitable for the growth of hairy bamboo shoots. Yuyao dried bamboo shoots can be used to make many special dishes, such as soup, steaming, roasting fish, stewing chicken, boiling tofu, barbecue, etc., which are suitable for both meat and vegetables. It is said that when Premier Zhou Enlai came to Hangzhou, he always asked the chef to make a special dish of Ningbo flavor, dried bamboo shoots and barbecue. The production process of Yuyao dried bamboo shoots requires: select fresh and tender bamboo shoots, and 100 catties of fresh bamboo shoots should be sliced and dried within 2 days to make 45 catties; Chinese mustard should also be tender, washed and dried on the same day, pickled for several days at a ratio of 100 to 34, and then dried; use a large pot, put an appropriate amount of water in the pot, put the dried bamboo shoots at the bottom, spread the dried vegetables on top, first cook over high heat, then simmer over low heat, mix evenly in the middle, and remove from the pot when the water is dry. Then dry in the sun until completely dry, and store in a wine jar. The mass production of Yuyao dried bamboo shoots began in the 1930s, with the brand "Youyi". After the 1950s, the production of dried bamboo shoots spread throughout Yuyao.
