Zhejiang Jinyun sesame cake is a traditional pasta with a unique folk flavor in southern Zhejiang. It is also called "barrel cake" because it is baked with a special tool "cake barrel". It originated from Emperor Xuanyuan and flourished in the late Yuan Dynasty and early Ming Dynasty. Speaking of the origin of Jinyun sesame cake, there is a relatively popular legend. It is said that in ancient times, Emperor Xuanyuan used a large iron tripod to refine elixir on the stalagmite of Jinyun Xiandu. In order to seek immortality, local villagers followed suit, made earthen tripods, and went up the mountain to collect herbs to refine elixir. Later, a woman in the village was baking pancakes at home. She saw that her son had just refined the elixir. There was still charcoal fire in the earthen tripod that was not completely extinguished and the inner wall was smooth. She put the pancake on the wall of the tripod and slowly baked it. The fragrance of the pancake filled the whole village, and other villagers came to see it. After eating the pancakes taken out of the tripod, everyone found that the pancakes baked in this way were crispier, more fragrant, more glutinous and softer than those baked in the pan. So this method of making pancakes gradually formed and has been passed down to this day. Jinyun sesame cakes are made of a variety of ingredients, mainly flour, fresh pork and pickled mustard greens. The sesame cakes are then placed in a cake barrel and baked over charcoal fire. The baked sesame cakes are so fragrant that people want to try them just by smelling them. If foreign tourists come to Jinyun and don't eat sesame cakes, it would be a wasted trip. In 2021, the fifth batch of national intangible cultural heritage representative projects announced by the State Council included the Jinyun sesame cake making technique.
