my country has a long history of winemaking, with a long history and diverse skills. Handan City, located in the south of Hebei Province, is located in the North China Plain. Since ancient times, it has been known as the "granary of southern Hebei" and the "hometown of famous wines". The region spans 114115 east longitude and 3637 north latitude. It has a warm temperate continental monsoon climate with distinct four seasons and sufficient sunlight. Therefore, the grains of crops such as sorghum and wheat grown are full and the starch content is high. In addition, the specific region has abundant groundwater resources, sweet and clean water, and a superior geographical and economic environment, which provides unique natural conditions for winemaking. In the long river of history, Handan winemaking has gone through an evolution process from fermented wine to distilled wine. The ancient traditional craftsmanship has been passed down, and it is one of the birthplaces of my country's Luzhou-flavor Daqu wine. Zhenyuan Zengjiu was founded during the Hongzhi period of the Ming Dynasty (1496 AD) and is an outstanding representative of Handan's winemaking culture. Using high-quality sorghum as raw material and wheat koji as saccharification and fermentation agent, the wine is aged and fermented in mud pools for 60 to 90 days, and then distilled with slow fire. A set of special processes are adopted, including picking wine according to the size of hops, grading and warehousing, low-temperature aging, and natural aging. Then the finished product is carefully blended, seasoned, and tasted. Zhenyuan Zengjiu has exquisite craftsmanship and unique style. It was presented to the court in the Ming and Qing dynasties. Emperor Qianlong personally sealed it with his imperial pen as "Ten thousand glasses of fine wine will not refuse to get drunk". In 1915, Zhenyuan Zengjiu participated in the Panama World Expo held in San Francisco, USA, and won the gold medal, becoming an international brand famous at home and abroad. It has been passed down from generation to generation and exists in a living state. It has distinctive characteristics and has a great influence in the local area. It is known as the "unmovable" sweet wine. After the founding of New China, the brewing skills of Zhenyuan Zengjiu, as an excellent national cultural heritage, have been effectively protected and highly valued by the local government. Its core technology and brewing technology have continued to this day. In 1999, the Ministry of Domestic Trade of the People's Republic of China recognized it as a "Chinese time-honored brand". Its representative product Zhenyuan Zengjiu has won the National Quality Award Silver Medal, "Chinese Wine Culture Classic Brand", "China Well-known Brand" and "Hebei Province Famous Trademark", and has outstanding historical, cultural and scientific value.
