Xiushui whistle making technique (third batch provincial level) Xiushui whistle is the best traditional local snack in Xiushui. It has a long history and a long history. To make Xiushui whistle, the outer embryo uses high-quality hairy taro from the Mufu Mountain area in northwest Jiangxi as the main raw material. The filling uses fresh pork or bacon, with winter bamboo shoots, mushrooms, carrots and other ingredients and condiments. It is made by traditional manual methods through more than 20 processes. The traditional Xiushui whistle weighs about 50 grams, with a pointed top and a round bottom, and a round drum in the middle for stuffing, so it is called a "big whistle". The traditional way to eat Xiushui whistle is to steam it in a steamer. It is natural and pure, with a thin skin and thick stuffing, smooth and soft, and it is fragrant and has an endless aftertaste. The traditional handcraft of Xiushui whistle has been passed down through oral and hand for thousands of years. The folk skills are rich and colorful, and the production methods are varied and amazing! CCTV and Jiangxi TV have made special reports on Xiushui whistle in the program "National Customs". As the inheritance representative of Xiushui whistle, Xiushui Yuanshengyuan whistle won the "First Jiangxi Famous Snack" in December 2000, and was recognized as a "Chinese Famous Snack" and won the gold medal by the China Cuisine Association in October 2003. In December of the same year, it was recognized as a "Chinese Famous Snack" by the China Cuisine Association. Making and eating whistles has become a traditional custom of Xiushui people for thousands of years. During festivals and gatherings of friends and guests, Xiushui whistles are an indispensable delicacy on the table. With the reform and opening up, Xiushui whistles have been rooted in the hearts of Xiushui people as a symbol of homesickness and reunion, and are rich in local characteristics. In June 2010, the project was included in the third batch of provincial intangible cultural heritage representative list.
