Black tea making technique (Ninghong tea making technique) is a traditional technique of Xiushui County, Jiujiang City, Jiangxi Province, and one of the national intangible cultural heritages. Ninghong tea originated during the Qianlong period of the Qing Dynasty and is one of the earliest Gongfu black teas in China. Xiushui, the main production area of Ninghong tea, pays attention to the solar terms and seasons when picking and making. The selection of varieties is Ningzhou small species with fresh leaves and tender buds, one bud, one bud and one leaf, one bud and one leaf, and some one bud and two leaves; the production is rigorous, and it is made through withering, rolling, fermentation, drying and other processes. Ninghong tea has tight and beautiful strips, golden hairs, upright tip, and dark color. It has the unique quality of high fragrance, strong taste, and mellowness. It has the reputation of "tea covers China and the price is the best in the world" and "Ninghong does not come to the farm, and tea leaves are not opened". Ninghong tea originated in Xiushui, Jiangxi. Because Xiushui was called Fenning and Yining in ancient times, the black tea produced is referred to as Ninghong. Because the production process belongs to the unique Gongfu black tea in China, it is also called Ninghong Gongfu. The main production area of Ninghong tea belongs to the subtropical humid monsoon climate zone. The local ecology is excellent, the rainfall is abundant, the sunlight is sufficient, and the red soil rich in potassium, nitrogen and phosphorus is particularly suitable for the growth of tea. It is very conducive to the synthesis of amino acids, theaflavins and tea polyphenols in Ninghong tea, which has created the unique quality of Ninghong tea with high fragrance, strong taste and mellowness. Ninghong tea originated in the Qianlong period (about 1785), became famous in the early years of Daoguang, and flourished in the Guangxu period. It is one of the earlier Gongfu black teas in China, with the reputation of "tea is the best in China and the most expensive in the world" and "Ninghong tea is not unpacked without visiting the store". In the 17th year of Guangxu (1891), Ninghong tea was presented with a plaque by the Russian prince, "tea is the best in China and the most expensive in the world". In the 30th year of Guangxu (1904), Ninghong tea was listed as a tribute to the Qing court. In May 2001, the Ministry of Agriculture of China selected Xiushui County as one of the first 20 demonstration bases for pollution-free tea production, which achieved a leapfrog development of Ninghong tea industry, and further inherited, developed and innovated Ninghong tea making skills. On May 24, 2021, the "Black Tea Making Skills (Ninghong Tea Making Skills)" applied by Xiushui County, Jiujiang City, Jiangxi Province was included in the fifth batch of national intangible cultural heritage representative project list extended project list by the State Council, heritage number: -149.
