The making technique of Polo Zong
The making technique of Polo Zong Polo Zong is a unique delicacy made by the rural areas around Nanhai Temple in Huangpu District to celebrate the Polo birthday on February 13th of the lunar calendar every year. It is popular in the fifteen townships participating in the Polo birthday festival, and the Polo Zong in Miaotou Village, where the Nanhai Temple is located, is the most famous. The uniqueness of Polo Zong lies in the leaves and the cooking. The leaves are specially selected from banana leaves. After July every year, villagers begin to collect banana leaves and take them home. They are first boiled in boiling water, withered and the bitterness removed, and then dried to retain the unique plant fragrance of banana leaves. After the zong is wrapped, it needs to be steamed over an open fire with wood for 8 hours. After being cooked and dried, the leaves and ingredients are integrated into one, with a unique flavor.
