Nanxiang Xiaolongbao is a traditional specialty of Nanxiang Town. It originated in the Tongzhi period of the Qing Dynasty (1871). For more than a hundred years, the production area of Nanxiang Xiaolongbao has been mainly distributed in Nanxiang Town, Jiading District, and later expanded to the entire Jiading District and the Old Town God Temple in Yuyuan, Shanghai. Huang Mingxian, the founder of Nanxiang Xiaolongbao, was born in Nanxiang Town, Jiading District. In his early years, he opened the Rihuaxuan Cake Shop and sold Nanxiang big steamed buns. Huang Mingxian carried steamed buns to Guyi Garden every day to sell them. The big meat steamed buns were delicious and popular. The bosses of the same industry heard about it and came to Guyi Garden to sell big meat steamed buns, which affected Huang Mingxian's business. He could not monopolize it alone, so he adopted the method of "heavy filling and thin skin, changing big to small" for big meat steamed buns. He used refined white flour to make thin skin with tight fermentation, and used fine meat as the filling. He did not use MSG, boiled the skin in chicken soup and mixed it with jelly to make it fresh. A small amount of finely ground sesame is sprinkled into the stuffing to make it fragrant; crab powder, shrimp or spring bamboo shoots are also added according to different seasons to make it fresh. Each steamed bun has more than 14 folds, and one tael of flour can make 10 steamed buns. They are shaped like water chestnuts and are translucent, small and exquisite. When they are out of the steamer, take one and put it in a small dish, poke the skin, and the sauce fills the whole dish. It is a good product, and gradually formed the characteristics of thin skin, fresh juice, tender meat and rich stuffing. Later, the Nanxiang people who traveled to Shanghai invited Huang Mingxian to open the Nanxiang Steamed Bun Shop in Shanghai Chenghuang Temple and the Guyiyuan Steamed Bun Shop on Xizang Road, named Nanxiang Xiaolong, which has been famous until now. Nanxiang Xiaolong is famous for its delicious taste and popularity, and the bosses of the same industry have followed suit, so that Nanxiang Xiaolong can be seen in Shanghai and all over the country. Now almost every restaurant in Nanxiang Town serves Nanxiang Xiaolongbao. The Xiaolongbao made by Nanxiang Steamed Bun Shop in Yu Garden is a traditional snack of Old Town God Temple. It has a thin skin, is transparent and shiny, and is rich in stew and delicious. It tastes great when eaten with shredded ginger and fragrant vinegar. In different seasons, fresh delicacies are added to the pure fresh meat filling, such as tender bamboo shoots in early spring, shrimps in spring and summer, and crab meat in autumn and winter, which makes it taste unique. As early as the 1920s and 1930s, it had become one of the three heads of Old Town God Temple (Xiaolongbao, spiced beans, and candle heads), and was well-known.
