The brewing technology of Shanghai rice wine originated from the earliest history of winemaking in China. For more than 5,000 years, rice wine is the oldest fermented wine in my country. The earliest origin of Shanghai rice wine was the local three white wines in Fengjing. "100 Fengxi Bamboo Branch Poems" has "I heard that the new October white wine was opened, and it was brought in from the jars and pots." "October White" is the "three white wines" produced in October. "Brew a cup of Shuangyan wine, and the boat is clear and suitable for tying the boat when the fallen flowers fall", reflecting the scene of Fengjing people drinking and boating. Fengjing Yellow Wine is made of glutinous rice and fermented twice to become a liquid beverage. Fengjing is an ancient town of Wuyue. This wine not only absorbs the essence of Zhejiang Shaoxing wine, but also preserves the craftsmanship of Jiangsu sweet liquor. According to folklore, the two production workshops representing the flavors of Jiangsu and Zhejiang became enemies because of their business rivals. The two families never interacted with each other, but their children developed feelings for each other because of love. They absorbed the secrets of winemaking from the two families, learned from each other's strengths and weaknesses, and finally brewed the now famous "Shanghai Old Wine". Yellow wine is closely related to the lives of ordinary people. It is a low-alcohol nutritious wine that is easier to drink than white wine. It is a must-have for people in the south of the Yangtze River when they hold weddings and funerals. Yellow wine is also the best seasoning for cooking, which kills fishy smells and increases fragrance. With the industrial production, the brewing technology of Shanghai Yellow Wine has been forgotten. Jinfeng Company currently has workshops for production, but the output is very small, nearly 100 tons, so it must be effectively protected.
